I have always been a believer of the wonders of US Dehydrated Potatoes. I have been working on various recipes using it and every time, I am falling for the convenience it brings. I have previously mentioned here on the blog that I am one of those old souls who appreciates the art of slow food. However, it does not negate the fact that sometimes, convenience and time come as a priority - especially when a situation calls for it.

I am a recipe developer and food stylist by trade so, it is important to me that the materials I am using for my clients are of good quality, convenient to use, versatile, and do not require too much time to prepare because in this profession, time is gold.

In recipe development, I often use US Potatoes - fresh, frozen, and dehydrated. I am a believer of the nutritional value that one can get from US Potatoes so it is part of my arsenal. I have shared recipes here on the blog that use both fresh and frozen US Potatoes. Now it's time to tackle  US Dehydrated Potatoes.

Here's one secret of the trade; do you know that some food stylists use mashed potatoes when styling ice cream for a photo shoot? Ice cream melts at a rate of lightning speed, mashed potatoes do not melt even if under the light and  can be easily molded into the same structure as that of an ice cream. True story.

As a food stylist myself, this trick works like a charm all the time. Yet during a photo shoot, we are always pressed for time. So, instead of boiling potatoes which takes time, I always resort to US Dehydrated Potato flakes also known as instant mashed potatoes. Plus, I don't have to carry bulky potatoes with me all the time because since US Dehydrated Potatoes are in a powder form, it can fit into  light packaging.

At home, when I do not have enough time to slave away in the kitchen, US Dehydrated Potatoes also comes handy. They are versatile and very convenient to use so I can create a number of dishes using them. It is widely available in leading supermarkets so my pantry is never without US Dehydrated Potatoes.

The recent recipe I have come up with using US Dehydrated Potatoes that my family and friends love is Gamja Jeon with Kimchi (Korean Potato Pancake with Kimchi).

I love eating and cooking Korean food and this recipe is one of my favorites. Gamja Jeon is very easy to make but I made it way  easier by using two types of US Dehydrated Potatoes - flakes and starch.

Instead of boiling fresh potatoes and mashing them which can  takes around 30 to 40 minutes, we will use potato flakes . And instead of straining the potato puree and separating the starch from the water, we will use potato starch.

The US Dehydrated Potato flakes will make our Ganja Jeon smooth in texture while the US Dehydrated Potato starch will give it the delightful crispness we all love in fried food. I added the kimchi for extra kick but if not inclined, feel free to omit from the recipe and it will still yield an awesome result.

Korean Potato Pancake Recipe [How To Make 감자전  Gamja Jeon]

This is an easy recipe for Korean Potato Pancake or Gamja Jeon using US Dehydrated Potato flakes and US Dehydrated Starch.

Prep time: 5 minutes
Cook time: 15 minutes
Total time: 20 minutes
Yield: 3 - 4 servings

Ingredients:
3 cups US Dehydrated Potato Flakes
1/2 cups US Dehydrated Potato Starch
1/2 cup Chopped kimchi
1 cup Chopped scallions or leeks
2 cups Water
Pinch of Salt and Pepper to taste

For the sauce:
2 Tbsp. Soy sauce
1 Tbsp. Rice vinegar
1 Tbsp. Sugar
1/4 tsp. Chili sauce (optional)

Cooking Directions:
1. Mix US Dehydrated Potato flakes with water until it yields a mashed potato consistency.
2. Mix US Dehydrated Potato flakes mixture with US Dehydrated Potato starch.
3. Add chopped kimchi and scallions/leeks.
4. Mix until well incorporated.
5. Season with salt and pepper to taste.
6. Fry mixture until golden brown. Around 1-2 mins. per side.
7. Mix all the sauce ingredients and serve alongside the fried potato pancake.

This Gamja Jeon with Kimchi made with US Dehydrated Potatoes is very easy to make and very delicious as well. The traditional recipe calls for fresh potatoes but when pressed for time and when you want something very convenient, I highly recommend using US Dehydrated Potatoes.

US Dehydrated Potatoes are just like any US Potato, they have impressive nutritional value . The bonus is the fact that it is very versatile and convenient. Needless to say, it is one of those products  I can highly recommend.
