No Bake Blueberry Cheesecake by Pellegrino's

The email that proposed an introduction to No Bake Blueberry Cheesecake held an enthusiastic tone I could not ignore. The name Pellegrino's was not mentioned. Instead, the letter suggests the excitement of a home baker eager to hear opinion about her product. Recipes for no bake cheesecake usually call for gelatin which I am not a big fan of, hence the apprehension.

Yet, there was something about the sincerity of the letter that got me. After all, one cannot go wrong with an open mind, so I said yes. Days after, Pellegrino's No Bake Blueberry Cheesecake arrived in our doorstep, hand carried by a charming lady named Abbie, the one who wrote me the email.

Abbie is the better half of Erwin, owners of a food stall called Pellegrino's Roasted Chicken Station located at PhilamLife Tower in Makati. They have been in the business for four years now serving roasted chicken, pork bbq, liempo, best paired with side dishes they also mastered such as baked macaroni, eggplant salad, potato salad, coleslaw, among many others. In the hope of expanding their menu, they opened their door to cheesecake making business.

Aside from the food stall, they cater to customers in need of packed meals for simple gatherings. Their location at PhilamLife Tower do not give them the liberty to cook food on location so every morning, food are prepared in their nook at Boni Avenue in Mandaluyong City.

Baby step is the way they chooses to go, slowly but surely. So currently, they are looking into opening a small sit down place wherein people can enjoy their cheesecakes and coffee. Meanwhile, they are selling their cakes to friends, colleagues, patrons, through word of mouth and through their Facebook page while the store they are about to open is still in the works.

As mentioned, although I am crazy about cheesecakes, I am not really a fan of no bake variety. Reason being is the usual incorporation of gelatin that holds the entire thing together. That's the dilemma I have encountered in the past when dealing with the no bake variety. Good thing though, Pellegrino's No Bake Blueberry Cheesecake uses pure cream cheese on their cheesecake.

I find that fact quite obvious because I noticed how it can easily melt when placed in room temperature, which I do not mind. The flavor also suggests that no extenders where added to the mix saved for the tinge of cream which I am guessing that came from the decor on top of the cake. The blueberry preserve used tasted fine with me, although it is not the usual toppings I enjoy in my cheesecake.

Now the thing that makes Pellegrino's No Bake Cheesecake special for me is the crust. Made out of crushed biscuits and cashew nuts, the crust in my opinion elevated the entire experience of enjoying this cheesecake. The flavor in its wholeness has the right balance of sweetness and tartness. Creamy but not cloying. The crust contributes to the texture, more so in the flavor.

Aside from blueberry variant, Pellegrino also offers other cheesecake flavors such as Red Velvet Cheesecake, White Chocolate Almond Cheesecake, Belgian Chocolate Cheesecake, Durian Cheesecake, Key Lime Cheesecake, Toffee Cheesecake, and Johnny Walker Cheesecake (Now this one sounds really interesting!)

Pellegrino's accepts order request at least 1 day in advance. Orders can either be picked up at PhilamLife Tower in Makati or at their location in Boni Avenue Mandaluyong. They are also tied up with City Delivery that charges Php150 to Php200 within Makati, Pasig, and Ortigas CBD area.
