Milo Cake Flan Recipe

July 30, 2017
This No Bake 4-Ingredient Chocolate Cake Recipe I made using my KitchenAid Artisan Mini was inspired by the Easy Milo Cake Flan Recipe that has been trending on some some cooking groups on Facebook. I am not even sure if it is politically correct to call it cake nor flan for that matter because the texture is more of fudge. But let's just settle with it.

The charm of this recipe lies on the fact that it is really easy to make and it only takes four ingredients - one of which is even optional.

So really, this can easily be a 3-ingredient no bake cake and still, all shall be well with the world.

And get this - it's no bake cake. You can either pop this in the microwave oven for good five to ten minutes or you can just steam it. In my case, I steamed the hell outta this goodies because my good ol' microwave died on me on the day it was supposed to make an appearance here on the blog.

Of course I use my ever reliable KitchenAid Artisan Mini because while I possess very able arms that can be liken to an amazon, I prefer the help of my KitchenAid. We can save our energy to more challenging things in life like fighting zombies and saving the world, so really, having KithchenAid on your kitchen I tell you, is golden. We can relax in the kitchen.

Instead of using standard size cake pan or the traditional creme caramel/leche flan molder just like those peeps on Facebook who jumped on the bandwagon used, I opted for the individual muffin pan instead. It is great because you can eat the cake right out of the pan since it is in one serving portion size anyway. That's what I would usually do but for this blog post, I dressed the mini cakes up a bit.

The KitchenAid's wire whip attachment is perfect for this job. I initially used half setting so as to avoid the powdery ingredients splattering all over the place. After good three minutes of whisking, I opted for setting 3 all the way for about ten more minutes until there's no lumps of milk, chocolate powder, and sugar in the mixture.

Do not over whip if you don't want more air incorporated in your mixture. Just be sure that the lumps are dissolved. In my case, I don't have problems with air on this particular cake because I am going for a little fluffy outcome since its texture is fudgy anyway. If you want a dense texture, go easy on whisking.

Now the four ingredients in this recipe are of course the chocolate powdered drink Milo, powdered milk, sugar, and egg. The powdered milk is optional. I guess if you want strong chocolate flavor then skip the milk. I love the classic combination of chocolate and milk, so I honored their marriage in this recipe.

The star ingredient of course, is the chocolate powdered drink. Milo to be specific, because it is Milo cake flan after all. You can however opt for your favorite powdered chocolate brand but I haven't tried it so I am not sure if there are some recipe adjustments to make. I did however tried using Ovaltine once with same measurement of ingredients and it also yields a good result, albeit with lighter flavor.

So don't be afraid to experiment. I am dead set on making this recipe with the Cadbury powdered chocolate next time to see how it will fair.

I cannot really track down who is the first person who shared this recipe on Facebook (All credits to them, hey!). I just woke up one day and everybody is doing it and sharing their own recipe of it. Majority of them says that the recipe measurement that works for the is the combination of one sachet of Milo (22g), one sachet of powdered milk (33g), two tablespoon of sugar, and one large egg.

I tweaked the measurement up a bit to see the ratio of ingredients that works well for me. So this recipe calls for 1 cup of chocolate powdered drink (Milo), 3/4 cup of powdered milk, 4 Tbsp. muscovado sugar, and 2 medium sized eggs

This recipe yields six mini sized cakes. If you are going to use white sugar, you may want to adjust it to 3 Tbsp. instead of four because white sugar is way sweater than muscovado. We don't use white sugar in our house so it's muscovado for me. I used two eggs because I only got medium size ones on hand. One large egg works well for this recipe too.

All you have to do is combine all the ingredients in a bowl and mix it until everything is dissolved into a slightly thick liquid consistency.

Spray some oil into the muffin pans so that the cake wouldn't stick on it. Then pour the mixture into it and tap it slightly on the table to release air and avoid bubbles in your cake. In my case, I really don't have problems with bubbles. I sometimes even prefer having it as it creates little craters on the cake which I deem perfect if I am going to slather it with ganache or any other filling I am planning to spread on it.

But I am a weird person so I prefer things like that sometimes. You can of course, take the usual route of releasing the air bubble from your mixture and achieve that perfect-looking cake you so desire.

To avoid water steam from coming into your cake mixture, cover the pans with foil. Never ever forget this step.

Steam the cakes for 30 to 35 minutes. Do the toothpick trick to check if the cake is already cooked well. You can do it by simply inserting a toothpick into the cake and if it comes out clean, then it is good to go. Otherwise, you can steam it more. For this recipe 30to 35 minutes is good enough.

Let the mini cakes rest for 5 to 10 minutes before unmolding it from its pans.

See the little craters on the cakes? I usually prefer little imperfections like that because it feels rustic. I made a perfect looking Milo cake flan once when I brought it to my nephews' school party and everybody think its pretty. But truth it, my kind of pretty is the one shown in photo below.

These mini cakes can be eaten as it is, straight out of its pan. Or you can also dress it up a bit with your favorite toppings.

I made a Dulce de Leche Sauce the other day and since this cake isn't overly sweet, I dab a little sauce on it. It was perfect. I will share the Dulce de Leche Sauce recipe here on the blog in due course, if so incline, please do watch out for that.

Now here is one trick. I popped three of this mini cakes into an oven toaster for 5 minutes and it resulted into a crisp outer layer with fudgy center cake I so loved. So it can also be a good option to try if you have the extra time. I put in some egg chocolates on top of the three toasted mini cakes and it sort of reminds me of Cookie Monster, only it is not blue.

So yeah, feel free to experiment with the toppings or leave it as it is. Either ways, this No Bake 4-Ingredient Chocolate Cake is guaranteed to be an enjoyable treat.
